The only reason that this question is kinda tricky to answer is entirely dependent on what program you used to save the file. If you used Windows Office, it will be considerably less files compared to just using notepad, because off all the bells and whistles that come with Office. This affects it much more than the actual volume of text.

Even if it power point docs, you probably still won't fill it up. However, if you are scanning documents and saving as pdfs it will use up more memory per document. Having said that, 16 GB of memory will hold a lot of pages of document unless it has many images, equations or other graphics contained in them.

Your flash drive holds about 16,777,216 and each Word document is 5kb-15kb (how much formatting and text is inside the document). Now, your flash drive holds about 17,179,861,984 bytes. Each text document is about 10-40 bytes (also depending on how much text is inside) So if you hold only Word documents at 10kb each, you can hold about 1,677,721 Word documents. And if you hold only .txt files at 20 bytes each, you can hold about 858,993,459 TXT files.
