I have two sonos 5 speakers with an Arc/sub. I added the two 5s as part of the souround sound setup and I am able to control volume on all speakers through the phone app or through the touch controls.

If the Sonos Five is set up as an independent speaker (it's own room) the remote will only turn up what is connected to the tv physically because the remote is designed to only control the Tv. There's no way for the tv remote to control the Five (or anything that doesn't use IR). To turn them both up, you'd have to use the app to turn the group up.
