“When using Vidbox with my Sony CCD-TRV68 camcorder HI-8 tapes I can get sound and video quality very well using the RCA cables and the S-video cable...however; I continually hear a 'buzzing' noise for the audio throughout the video. Any ideas to help?”

The CCD-TRV68 user manual shows that it uses an included A/V connecting cable (3.5mm A/V pin on one side, RCA yellow and black on the other). If you are using standard RCA cables (RCA yellow-white-red connectors on both sides) then it is likely that the video and audio signals are mixing together when connected to the USB capture device. If you are using the A/V cable provided with the camcorder, you may also want to check if it gives the same behavior when connected to a television with those cables.
