“Getting this TV and my Tivo Roamio and our Blue Ray player are not 4K but our Roku will be so do I need all 2.0 cables to get the best performance or will the older HDMI cables being used now for my Tivo and Blue Ray work and I'll only need 1 for the Roku”

Only if you have anything running full 4K @ 120hz will you need an HDMI 2.1 compatible cable. Any HDMI cable labeled "HighSpeed" will all handle 4K @ 30 hz which is fine for most users since most content is 24 or 30 frames.
