“I don't want to hook up the rear surround speakers. BUT, I don't want to lose the sound that would otherwise come from them (I want all the channels through the sound bar/sub, like 3.1 instead of 5.1). Is there a setting for the sound bar to do this?”

Yes, all surround settings are completely customizable in the settings of the remote. See the attached picture with the section labeled surround on/off. You can adjust the surround settings to 3.1 and 2.1 from 5.1 to revert all the sound normally going to those speakers to the remaining in the system.
