“Seems to drain properly after a wash cycle, however the next day I will notice clear water in the tub. I can successfully drain that water by hitting drain/cancel button and hear the water girgling in my sink. Why on earth is water coming back into it?”

You need a dishwasher drain check valve on your drain line. For about $20 they can be found at your local hardware store or your local friendly plumber probably has one.
