For Bionic Reading, if you're talking mostly about fonts, you can actually manually load and select fonts onto your Kindle Scribe by plugging it into a computer. I found a TikTok of all things about adding the Bionic Font to a Kindle, so I would just do a search online for "bionic reading kindle" and there are a bunch of examples!
