A: Yes you can. One via the HDMI and one via USB-C or both via 2 USB-C. You can also get adapters to run multiple off a single usb-c
A: No, Apple computers don’t have touch screens as of yet, perhaps in a few more years. Need an iPad for that, you might want to look at the 12” iPad Pro M2 that was just released. I have an 11” Pro and love it. J
