A: I’m guessing because there is a divider that can be removed. With the divider in there are two zones, remove the divider and it is your third zone. The heating cannot be set per zone, it’s all the same.

A: It's instant heat. I've never preheated and everything has been great. It is very easy to over cook when preheating. Hope this helps
