A: Yes the grates are cast iron. I absolutely love this stove. It cooks so well at any setting and is very beautiful in my kitchen. An absolute great purchase.
Q: Can I remove the center griddle and put regular matching burner grates in the middle?

A: There are 2 settings for Sound Volume. ON and OFF. There are no levels in this oven's software. Even the manual says so. If you think there are, you are incorrect. From the manual: Sound Volume (Snd) This feature allows the oven tone volume to be adjusted on and off.
