Q: The mount itself is level, but the TV, 75" Samsung, is slightly lopsided. How is this remedied?
A: There are 2 screws- one on top of each of the brackets that you attached to the back of your tv/snapped into the thing that you mounted on the wall. You simply need to tighten or loosen one side, depending what side you want to go up or down. I just turned the screw with a pair of plyers, but I think you need an alan wrench or different kind of bit to turn it with a screwdriver. I attached the picture from the back of the box that shows you what to do.
Q: Can I mount this on a lath and plaster wall?
A: You most certainly can mount this on lath and plaster walls. The key is finding the studs - and honestly finding the center of the studs. The mount itself is really heavy, and then you're putting a heavy television on the end of a long lever. That's a ton of force on those four lag bolts. If you hit the edge of a stud with those bolts, nothing good is going to happen. So drill a bunch of tiny pilot holes to find the two edges of the stud. Lath and plaster makes it really hard to find studs. Just make sure you're anchoring that truly in studs and not just the lath.
Q: What is the difference between swivel and full motion tv mounts?
A: A swivel mount will turn from side to side only. A swivel/tilt mount will turn from side to side, and tilt up and down. A full motion mount will swivel side to side, tilt up and down, and extend from the wall, and retract back to the wall.
A: Yes the mount tilts. The mount has a full range of motion: tilting up, down, left, and right...as well as pulling it out from the wall and pushing it back. The mount comes with several different mounting brackets including VESA mounting hardware and pretty much all new Samsung models adhere to VESA standards. So long as the mount is properly installed, it should support the weight of either of those TV models. The mount is rated to support 125 lbs; the QN75Q70R weighs 79 lbs without the stand and the QN82Q70 weighs 94 lbs without the stand. However, I used this mount for a QN75Q80R that weighs 82 lbs without the stand and it seemed a bit precarious while making angle adjustments. Because of this, I downsized to the QN65Q80R that weighs 56 lbs without stand and it works wonderfully. TLDR: Yes, it tilts. Yes it will fit either of those TV models. However, based on my own experience with this mount, I would recommend a more robust mount for those models despite the mount's weight rating.
