A: I think 3" might be a little tight. I measured and to be safe I think you will need at least 5" of clearance for the shelves to roll out easily. With that said, the door is reversible, so perhaps you could switch the door to open in the other direction away from the wall.
A: Yes, the shelves are removable. You'd have to take out 2-3 shelves to get standup clearance depending on bottle size.
