I don't have Spotify or Uber, but anything you can bill to your Apple Account or sign up through iTunes/App Store (think when you enter your password or FaceID) typically will try to charge your Apple gift card balance first. If you are using Apple Pay or a credit card to pay, then it probably won't charge an Apple Gift Card
