“Does this controller has analog throttle triggers (L, L2, R and R2), similar to using a GameCube controller on a Nintendo Switch? I know it says the joystick is analog so I am not asking about that.”

ZL and ZR (the L2 and R2 equivalents) are analog but ONLY when used on a PC in Xinput mode. When used on a switch or in DirectInput mode, the triggers are all digital, either full on or full off.
