“If I want to use this with a laptop that has a Windows operating system, and for work I connect to VDI. Would this work? Would the HDMI connect everything fully or do I have to use the USB-C to connect to my laptop?”

This should work but please note Acer has not tested this configuration and while you could use an adapter if necessary, we do recommend you connect directly for best results.
