“When using Apple Maps to navigate, and when receiving an incoming call, or dialing out, will the ILX-107 screen split to ensure the driver can still navigate? Or will the call screen completely cover the Map screen?”

If you’re on maps and you receive a call the call screen will completely cover the map screen, not a split screen. The directions will continue with a pop up at the top of the screen. Another option is answer your call and just press the map app to display maps while continuing your call.

Sorry, there was a problem. Please try again later.When you are navigating and receive a call, the phone UI takes over. You can still get the Maps screen back by the touch of a button on the screen, or using your rotary functions in your car (like in BMW).
