“Will I still hear sound from the TV when this is hooked up? Or will the TV mute and I'll only hear sound via the bluetooth connected speaker? (That's the way it works when I connect my speaker to my phone)”

It depends on your TV. Some TV's will mute the audio while others will continue to output sound through the internal speakers. If the sound continues to come out of the internal speakers you can either mute the sound or lower the sound completely.
