The most critical difference is the Operating System. The Fire TV Stick 4K runs on Android-based Fire OS, which supports over 30,000 apps and allows for sideloading. The Fire TV Stick 4K Select uses the new Linux-based Vega OS, which currently has a much more limited app selection (around 900) and does not support sideloading.

As the 4K Plus ( originally the regular 4k that just got renamed to reduce confusion) has a few more perks to it. Main difference are as follows. The 4k Plus will have access to "Dolby Vision" content while the select doesn't. Will only apply if you are subscribed to "Dolby Vision" content on certain apps. The internal memory of the 4k Plus is 2Gb while the Select is 1GB. Which all depends on how many apps you are going to use on the platform. Lastly the 4K plus is compatible with Wi-Fi 6 and the select is only compatible up to Wi-Fi 5 speed connectivity. As mentioned before the goal is to offer an entry level 4k Streaming device at a lower price point, but always keep an eye out for some sales, the 4K plus and 4K max prices could be as low as the Select which would give you a more powerful device at the same price or even lower!
