Yes, you can, but it will be sent to the Amazon account holder's email. The default email cannot be changed. you can, however, manually type in an address you want to send it to. It will not save the address you type in though. It kind of defeats the purpose of the darn thing when it is so cumbersome to use.

You can absolutely export documents as PDFs with the Kindle Scribe using the "convert to text" option under the share menu. The file can then be sent to any email address.
