“Can I create 2 island on 2 different profiles on the same switch? Meaning 1 personal island each for each profile, Or do I have to buy another switch to be able to have 2 islands?”

It's one island per console. The first profile to play is the "mayor" and the other person is basically a resident. You do, unfortunately, need a second switch for a second island. Truly a baffling decision on Nintendo's part.
