Sous vide is literally cooking under pressure with water. So I am not sure how you would accomplish placing something under pressure without a vacuum sealer and plastic bag. If you ever eat out at expensive or higher end restaurants they use the same method(s) to give you those perfect cooked steaks and pork chops.

The type of plastic used in these cooking bags is made to withstand the higher temps for cooking while submerged in water. It does seem weird at first but it doesn’t melt or make the food taste funny.
