“Should I buy the current apple iPad pro 10.5 in. which came out in June of 2017 and only has ios 10 or should I wait for the next version? When will there be an update? I don't want to start with a product that is already outdated.”

While this is a great devise, the newer version should be coming out in November of 2018

It wouldn’t matter too much cause the update will apply to that model as well. The newer ones are faster in a few ways see the videos on apple.com and see the difference.

Whatever OS you have installed at time of purchase, update after purchase. OS updates are always free. In fact you apple device will let you know when an update is available.
