You cannot listen using a cable with these headphones. Apple has not released a USB-C to 3.5mm cable yet as of writing this. 9/28/24

The literature that came with them said you cannot use them while charging the battery, so I guess that means you can't use them wired.

They don’t support wired connection with the new usb-c version. 
They have an older model that is a Lightning version that does support wired though
