“Is the Ipod 32GB plenty of storage for 8 and 10 year old kids? I am assuming so, but don't want to run into issues and wish I had gotten the 128GB.”

It should be enough. It actually depends on how much music, videos and games they plan to store. From my experience children easily get tired of games and videos and just keep their favorites so it should be a good start. They can always add and delete. They should have fun with Apple TV. My daughter had an older 16gig iPod and she was able to keep a lot of songs and games in it and she has it for over 10 years now with still some memory left
