“What's the real difference between this new 60hz display vs the xdr 120hz display? If someone is just doing admin work/zoom and not video editing or gaming on the monitor, is there going to be a notable difference? Any mouse or cursor lag from a 60hz?”

Not really, some say if they run it next to their MBP which has a 120Hz display they notice a slight lag in refresh. Stand alone you won't notice any sort of lag.
