Actually you shouldn't be thinking about speed as much as you should think about how much data AT&T will allow you each month. I bumped my netflix down to cd quality a long time ago because nobody really noticed and with normal watching from a family we were hitting around 350gig in two weeks on the highest setting in netflix. (and that wasn't even 4k) 
You will end up with less data and less pauses if you drop down

It will take longer to buffer at lower speeds but there isn’t a limitation on download speed to resolution. Steaming live tv will be choppy at low speeds.
