I believe you can only customize the band colors on the Apple site.

If Bestbuy has the band on their website, you can order the band that you want separately. It’s a little more money, but you have the option of wearing the black band or the one of your choosing. If you have a Bestbuy credit card, you can take advantage of the finance offer! Hope this helps!

If you wanted to get a space gray aluminum watch and it couldn’t come with the band you wanted you would have to order the band and have two. I believe Apple might do trades on bands but I am not certain when I use to work for Best Buy the Apple representative at my store said they were able to do that, but that was over 2 years ago.
