“If it get a watch with the cellular do I have to signup with a company right away? I would like to try it first without and if I feel Iike want the cellular get it later.”

If you purchase a series 4 watch with cellular it is not required that you use it it cellular. It also works without cellular like a normal Apple Watch without cellular.
