The $79 Apple Care is for Apple Watch Series 4 and later. The $49 Apple Care is for Apple Watch Series 3 & earlier. My best guess would be the more the expensive one would be for newer models but to be more accurate you can always go to the this link: https://mysupport.apple.com/add-coverage/producttypes and type in your serial number for your watch and see the provided plan that Apple themselves gives.
