“Had this Monitor for almost a year now, play fortnite on it, as of maybe a month ago I have had the weirdest lag spikes throughout every game .. can’t even enjoy the game anymore.. have tried everything possible.. what can the problem be ? I play Xbox one”

If your device is a standard Xbox one unfortunately fortnight has been having problems all across the board with the lag. You will see it on monitors and all sorts of TV's no matter the quality. With the power that fortnight now need the standard XBox one just has problems.
