To to address the second half, my experience is that you can use more than two shelves simultaneously, but what tends to happen is that they cook at different rates, with the top one receiving most of the heat. So if, for example, your muffins came out perfectly on the top shelf at 30 minutes, you might have to leave the ones in the lower shelf for 45 minutes. So you would have the option of cooking with just one shelf, and finishing after 1 hour (30 x 2), or cooking with two, and finishing after 1 hour 15 minutes (30 + 45). Another possibility would be to take out the top shelf after 30 minutes and moving the lower shelf into that position, for a total cooking time of (perhaps) one hour 8 minutes (30 + 30 + 8?).
