• I believe it's cast iron. It sure looks like it and cooks great. No stick waffles.

• The best answer that I have for you is: Iron that has a Non Stick Surface that the Bella company uses, however they do not share any information about their Non Stick Surface application

• Cooking surface is a non-stick coated aluminum grid! I always add a little oil to the mix before cooking waffles or pancakes and never had a problem with sticking. Just don’t use metal utensils against any non-stick surface or it starts to degrade!
