Gluten free breads are often more dense than wheat breads. The Gluten Free setting just toasts a little longer so the correct darkness is achieved according to what you've set.

Apparently gluten-free bread/waffles/etc are "denser" and must be heated longer at a lower temperature.

No the gluten-free button does not make your bread gluten free! Gluten free bread takes longer to toast so that is why that button is there.
