There is an option where you can set the water temp when you create a custom brew setting. The standard water temp setting for "strong" makes coffee that is definitely hot enough, and I like mine HOT.

You can maximize temp, bloom time, and flow rate. The thermal carafe will keep the coffee hot enough to drink for hours. The machine also has an automatic timer that lets you know how long it has been since the coffee was brewed. You can also choose cold brew which takes many hours at a low temperature. You decide the temperature.
