Cleaning should be accomplished regularly to avoid stains baking on repeatedly and becoming semi-permanent. The unit features a non-stick coating on the interior to help make this process relatively easy; however, over time as stains repeatedly are baked on they will become very difficult to manage. Try a paste of baking soda and water applied to the area allowed to dry and then wiped away with a damp cloth.

I haven't experienced any stuck on harsh food spills yet but I'll let you know how I worked that out if it happens.
