“I recently updated the firmware for the printer, and now it randomly prints pages of a PDF the wrong size. In a PDF where pages are the same size and on "resize to fit" setting, some will print at like 5 x 7 and then the next page will be full-sized.”

Try doing the update again. Sometimes the download can get garble, other times a bug is discovered because of result just as you have and it has been corrected since you downloaded last. If that does not work, then play with the settings your computer has for that printer.
