“Is this oven configured to limit current draw to 40 amps? The specs say you need a 40 amp breaker but if you have everything on at once it would pull nearly 64 amps.”

The CHS950P2MS1 requires a 40 amp circuit breaker. For more details, please review the "Electrical Requirements" section on pg, 2 of the Installation Instructions.
