Hi! Thanks for your questions, we'd love to help! 1. The unit does not come with special wok grates. We recommend using a flat bottom wok as shown on the bottom of page 9 in the Use and Care manual. 2. This model does not have an air fry feature and is not one of the models that can download it from the new software update. The model does not come with a special air fry pan. Though, a dark cooking pan helps to make your food crispy when air frying. 3. This model does have a temperature probe feature and does come with the temperature probe. 4. Based on the accessories area of the unit's product page, we see that this unit comes with a center grate and LP Conversion Kit. 5. Convection bake uses the bake and broil elements, cycling on/off at temperature, as the fan blows the heated air around the food. Convection bake would be used for cakes, pies, cookies, as well as the same foods you might also cook using traditional bake. The air fry feature uses the Broil element. So Convection would more than likely provide too much heat to substitute for air frying. 6. There is a warming setting available for the upper and lower ovens and there is also a proofing mode for the lower oven only. Hope this is helpful for you! Happy cooking. -Michael@Cafe
