Hi luvs2bake - Thanks for considering Café Model CTD70DP2NS1! Yes, the oven will cycle on and off throughout the cycle to maintain the set temperature. The goal is to maintain an average set temperature, but you will see a normal swing in temperatures throughout the cycle. This is typical of ovens, and is factored into how recipes are created and used. This oven will allow you to set a temperature that is not in a 25° increment, such as 267°F. On the temperature setting screen, the slider is set to 25° increments, but if you then tap the screen, then a digipad will appear that allows you to set the temperature to anywhere between 170 and 550° F.
