“Is there an optional paper cassette (tray) we can add? Our workflow is to have one tray loaded with regular paper and another loaded with envelopes so we don't have to manually change out different paper types in the same tray every time.”

There is an external paper tray. It is the piece of plastic that in the reviews nobody knows what it is for. You can do exactly what you are desiring. it is on the front of the printer just under where the paper comes out.
