“What is the shelf life of unopened ink cartridges ordered online?”

This is based on my personal experience, no recommendation by Canon. I purchased a 4-pack January 2020, but was purchased in a store, not online. I just put the last cartridge in the printer last week. Ink level showed a full cartridge. Therefore I am assuming that unopened with plastic wrap in place, not subject to high heat, the ink should last just over a year, maybe longer.
