• food will stick to the bottom mostly if it's a dry dish, they are dishwasher safe and oven safe.

• Not yet in my usage. I do stir gravies and spray pans before cooking certain meats. Have not tried cleaning in dishwasher since I do all cleaning of dishes by hand.
