“How many additional 3.5" hard drives can the PSU safely handle? From reading the other questions I know this has an 800w PSU and I already have the adapters for the case.”

With that large of a power supply then you are capped to what the motherboard can support. The Sata ports on the motherboard reflect how many HDDs you can install.
