They are primarily different in two ways. The G processor version has on-board graphics and does not require, but can use, an advanced PCIe graphics card. The X version requires a video card and instead of offering a graphics chip, you have a larger on-die cache memory. If you do not have an included video card, you will have the 5700G version. If you do have an included video card, chances are you will have the 5700X version - but not necessarily.
