The audio that passes through the HDMI will depend if the source audio is 7.1 channels and the device being connected to otherwise the HDMI will typically pass bitstream audio to allow any audio to pass through for audio playback. Typically receivers that can playback bitstream audio will allow the maximum channels the receiver can play and can typically be seen in the Windows audio playback devices. It is also important to note that stereo audio will only playback stereo unless your receiver can automatically convert that to 5.1 or more channels typically as a matrix type of surround sound.
