Yes, technically it will work, but it would not be a good experience for gaming. Desktop use would be fine.

I am using a 980ti and spanning three. In Rainbow Six Siege I've turned the in game resolution down to get 140hz frame rate consistently but a 1080ti might be able to maintain a good rate at 1080p or better. The game does not look much different to me at the lower resolution so I think it is not actually rendered at 1440p anyway. Some games like 7 Days to Die do not have as elegant a graphics engine and at full resolution take a big hit on refresh rate. That game does look allot worse at lower resolutions.
