It should BUT the Eero is limited to a 1gb Ethernet connection. But given most devices will not operate at that speed, it may not matter.

It can work well,  Make sure you get the eero 6+, or the eero 6 Pro to enable the fastest speeds you can get.  eero 6+ gets up to 1 Gbps, eero PRO 6e gets up to 1.6 Gbps

As long as the new ISP's ONT/modem provides access to the internet via an ethernet cable (and it would be VERY surprising if it doesn't, but check anyways, unpleasant surprises tend to happen when one doesn't check first) the eero should work fine.
