“Thought I was sold on this unit, till the reviews regarding loud fan noises and overheating. Are those issues being addressed to the satisfaction of the customers? Also, can more RAM be added later?”

As of this writing, this model has a 4.7 star rating out of nearly 1,300 reviews. A loud fan sound should not happen unless you are doing more intensive tasks particularly while charging as the fan will run to exhaust heat from the battery. This model is expandable to 16GB RAM.
