I can not answer to the compatibility to the latest iPad or the ease of editing. I will say that if you are processing many photos, to prevent streaking and residue on your original photos, clean the pick up rollers after 50 or so scans. DO this especially when scanning older photos that have been stored for a long time. This isn't so much of an issue with newer processed photos. Bottom line, make it a point to inspect the rollers, it'll also help prevent misfeeds, jamming and damage to the originals.
