I was looking for something similar. I wanted to reset folder photo counts. I found a reference to a config file on this board here by poster MarkT. Look in: "C:\Users\USERNAME\AppData\Roaming\EPSON\FastFoto\" for the file "config.json". The subjects you entered are listed under "photo_prefix_custom_subjects" and "saved_file_prefix_names". I assume you can (carefully) remove those you don't want. I have not tried this myself other than overtype key values. Do not have the FastFoto app started while editing and saving back. Definitely back up the config file first.
